Affiliation preselection may come from current user or tier

In GiveCampus giving forms, available controls depend on your permissions and the interface used by your institution.

The affiliation field can check values from a signed-in non-guest user's known affiliations or the matching tier affiliation. An Alumni selection in an editor/preview is not proof of a universal field default. Test the actual flow in a fresh guest session and inspect saved/personalized values before changing configuration.
